NEW SALAD REMIX
It’s hot. And nothing beats hot, like a crisp, refreshing salad when you’re hangry. Bored with the typical, refrigerator leafy greens, we chopped up some of the most nostalgic summer flavors in this fine bowl: cucumber, papaya, fresh cilantro, and green onion. We’re calling it (drumroll please): Cucumber Papaya Salad!
Nope this recipe was not planned.
In fact, it was made (and shared with friends) on the first try. So if you’re willing to give it a shot, consider this a warning that you too are a guinea pig. You may actually like this one, especially because the dressing comes from the same fruit. Um…double-win.
The star ingredient is our recent favorite, the superfood papaya, because why not.
It’s a cleanser, lightly sweet, and full of rejuvenating vitamins to “bring your sexy back” and give you that glow. Ok, maybe not by eating one bowl, but you get the picture. If you’re lazy in your fruit selection lately, pick up a papaya on your next round about in the produce aisle.
HELPFUL TIPS
- You can make this ahead of time (i.e. – the night before you eat it).
- It packs well (for snack or lunches).
- Follow the visuals below to get even, bite-size pieces.
- Go outside and eat it. You’ll thank us later.
- Make extra dressing for a marinade.
Ingredients
2 cups cucumber, peeled, de-seeded, and cubed into ½ inch pieces
3 cups papaya, cubed into ½ inch pieces
¼ cup red onion, finely chopped
¼ cup cilantro, chopped
¼ cup green onion, thinly chopped
1 tablespoon extra virgin olive oil
Juice from 1 lime
Pinch of sea salt and pepper
Steps
- Toss all of the ingredients together.
- Enjoy.
